Brewery to Take Over Hooked Site: Transforming Williamsville Dining with a Blend of Beer and Fusion Flavors

Steelbound Brewery & Distillery is moving, expanding its reach with a new franchise that will bring its presence to Williamsville.

The company has recently finalized a lease agreement with Ellicott Development to occupy 5195 Main St., a prime location inside The Mosey building, which also accommodates the Tapestry Collection by Hilton Hotel.

As part of this expansion, Steelbound will take over the space held by Hooked and formerly by Brioso, introducing its distinct brewery and distillery experience to the Williamsville area.

This strategic move marks an exciting development for Steelbound as they extends their footprint in the local culinary and beverage scene.

Steelbound Proposes $10M Hotel, Expansion at Brewery's Hooked Site Location

William Bursee, the owner of Steelbound Brewery and Distillery, has big plans for the future. He's proposing to build a new hotel and conference center worth $10 million. This facility will have 78 rooms and a large banquet area with up to 400 people. It will be located just north of the village, at the corner of Routes 219 and 242.

The 2018 Steelbound Brewery and Distillery outside Ellicottville will be connected to this new building. A 3,000-square-foot skybridge will link the hotel to the brewery's restaurant and bar. This bridge will have an open kitchen and dining room with ski slope views.

But that's not all. Bursee and his partners also plan to upgrade their beer and spirit production. They will renovate a big, 18,600-square-foot building near the brewery on Route 219.

This building, which used to be a wood kiln, will turn into a modern facility for brewing, distilling, bottling, and distributing their products. They expect to spend about $3.9 million on this project, which will boost their sales of 27 types of craft beer and 25 kinds of spirits.

Additionally, they will expand a 2,000-square-foot building on the site to about 10,000 square feet. This expansion, costing around One million dollars, will be used for storing barrels and aging spirits.

Steelbound will submit a detailed application later this month. At the March IDA board meeting, this application will be detailed. This technique may save them tax money, but details are unavailable.

Steelbound added a 1,600-square-foot addition to its brewery last month. This extension will quadruple the company's annual spirits production of 1,200 barrels and 1,100 cases.

The 80-person company plans to hire 20 more people this year.

The IDA board also granted Pierce Steel Co. of Olean tax benefits. Pierce Steel plans to move to the Hinsdale Route 16 Sanzo Beverage Co. building.

Steelbound Brewery Seeks for Tax Break for the Expansion

Meanwhile, just seven months after announcing big expansion plans, a brewery that's been around for five years in the Southern Tier is seeking nearly $1.3 million in tax breaks. This financial boost is meant to help bring their ambitious project to life.

Steelbound Brewery & Distillery is set on building a brand-new manufacturing campus right next to its existing setup in Ellicottville. This new area will include facilities for producing and storing their products and the grain required for brewing.

Steelbound is seeking significant tax cuts from the Cattaraugus County Industrial Development Agency for their next project. Sales tax discounts of $520,000, mortgage-recording tax breaks of $40,750, and a 15-year property tax break of $772,118 are requested.

Most of their project is retail-based, meeting the tax break limit, but Steelbound says it will attract tourists from outside the neighborhood, adding value.
